Experimentation conducted by DIPARTIMENTO PER LA INNOVAZIONE NEI IN SISTEMI BIOLOGICI AGROALIMENTARI E FORESTALI – DIBAF – University of Tuscia.

The ‘objective was to evaluate the technical suitability and practicality of operation of an innovative, multifunctional tank, Onda®, with a high degree of automation and low incidence of labor. The present research was conducted by vinifying Sangiovese grapes in red; to validate the objective, the same grapes were also processed in conventional winemaker, following the same winemaking protocol.

The experimentation was carried out at the Baldetti Winery (Cortona, AR) where the Onda® tank, manufactured and marketed by the Ghidi Metalli company (Pistoia), was installed.
The control panel of the Onda® winemaker was programmed to manage the entire production process, greatly reducing manpower compared to the conventional tank.
The course of fermentation was smooth, and no criticality arose. The chemical and physical parameters of Onda® wine were similar to those of Witness.

In the Onda® winemaker, the pump-less pumping over system and the technical gas injection system made it possible to have a controlled atmosphere inside the winemaker at all times and a good extractive capacity towards chromatic and structural components.

Although weak differences in the level of total and monomeric anthocyanins emerged, the differences between the two theses in % red, yellow and blue did not appear particularly appreciable. The initial difference in hue between the two theses decreased during storage until it almost completely disappeared.
