The Wave winemaker and the stages of controlled atmosphere winemaking
This is a study on the use of ‘ controlled atmosphere with the Onda winemaker performed by the Department for Innovation in Biological, Agrifood and Forestry Systems (DIBAF), University of Tuscia, in collaboration with Agricoltura Capodarco Soc. Coop. A R.L., Grottaferrata (RM).
The ONDA multifunctional winemaker allows the different oenological stages to be conducted in a controlled and redox gas-regulated atmosphere thanks to technical gas injectors (nitrogen,argon, CO2, oxygen or mix) positioned at different points.
The study determined the oxygen content (ppb) during macrooxygenation (0.2 l air/min for 5 min) of must from Montepulciano grapes, on the third day of fermentation/maceration, in ONDA tank, and highlighted the usefulness of being able to inject different technical gases in different areas of the tank.
