{"id":27399217,"date":"2017-02-10T19:07:30","date_gmt":"2017-02-10T18:07:30","guid":{"rendered":"https:\/\/www.ghidimetalli.it\/ghidimetalli\/fermenteurs-de-biere-a-temperature-controlee\/"},"modified":"2017-02-10T19:07:30","modified_gmt":"2017-02-10T18:07:30","slug":"fermenteurs-de-biere-a-temperature-controlee","status":"publish","type":"post","link":"https:\/\/www.ghidimetalli.it\/fr\/fermenteurs-de-biere-a-temperature-controlee\/","title":{"rendered":"Fermenteurs de bi\u00e8re \u00e0 temp\u00e9rature contr\u00f4l\u00e9e"},"content":{"rendered":"<h1><strong>Fermenteurs de bi\u00e8re \u00e0 temp\u00e9rature contr\u00f4l\u00e9e<br \/>\n<\/strong><\/h1>\n<p>&nbsp;<\/p>\n<h2>Fabio Massellucci, ma\u00eetre-brasseur du Birrificio 26 Nero, nous en parle.<\/h2>\n<p>&nbsp;<\/p>\n<p>Dans le <strong>processus de brassage<\/strong>, la <strong>fermentation<\/strong> est le moment o\u00f9 la magie op\u00e8re, lorsque le simple <strong>mo\u00fbt est transform\u00e9 en bi\u00e8re<\/strong> gr\u00e2ce \u00e0 ces micro-organismes appel\u00e9s levures.<br \/>\nLes levures sont inocul\u00e9es dans le mo\u00fbt, suivies de leur phase de r\u00e9plication et de la phase de fermentation.<br \/>\nDans la <strong>phase de fermentation<\/strong>, qui commence apr\u00e8s quelques heures, les levures commencent \u00e0 se nourrir des sucres, les transformant en alcool \u00e9thylique, en dioxyde de carbone et en d&rsquo;autres compos\u00e9s secondaires, r\u00e9sultant de leur respiration ana\u00e9robie, qui contribuent aux caract\u00e9ristiques aromatiques de la bi\u00e8re (esters, alcools sup\u00e9rieurs, acides organiques).<\/p>\n<p><strong>La levure utilis\u00e9e pour la fermentation<\/strong> est donc un ingr\u00e9dient tr\u00e8s important qui d\u00e9finit, outre le go\u00fbt et l&rsquo;ar\u00f4me, le style de bi\u00e8re que nous brassons.<\/p>\n<p>Les levures sont divis\u00e9es en deux grandes cat\u00e9gories :<\/p>\n<ul>\n<li><strong>Levures activ\u00e9es \u00e0 haute temp\u00e9rature<\/strong> et qui d\u00e9marrent la fermentation \u00e0 des temp\u00e9ratures comprises entre 15\u00b0C et 25\u00b0C. Elles sont utilis\u00e9es pour la production de bi\u00e8res de fermentation haute. <\/li>\n<li><strong>Levures actives \u00e0 basse temp\u00e9rature<\/strong> qui d\u00e9marrent la fermentation \u00e0 des temp\u00e9ratures comprises entre 5\u00b0C et 12\u00b0C. Caract\u00e9riser la production de bi\u00e8re de fermentation basse. <\/li>\n<\/ul>\n<p>La levure travaille donc de mani\u00e8re diff\u00e9rente selon la temp\u00e9rature, influen\u00e7ant les \u00e9l\u00e9ments secondaires (esters, alcools sup\u00e9rieurs, acides organiques) qui contribuent aux caract\u00e9ristiques aromatiques de la bi\u00e8re.<br \/>\nLe <strong>type de levure et la temp\u00e9rature de fermentation sont<\/strong> donc <strong>deux \u00e9l\u00e9ments essentiels<\/strong>.<\/p>\n<p><strong><img decoding=\"async\" class=\"size-full wp-image-13104 alignleft\" src=\"https:\/\/www.ghidimetalli.it\/ghidimetalli\/wp-content\/uploads\/2017\/02\/mastro-birraio-birrificio-26-nero-fabio-massellucci.jpg\" alt=\"\" width=\"328\" height=\"469\" srcset=\"https:\/\/www.ghidimetalli.it\/ghidimetalli\/wp-content\/uploads\/2017\/02\/mastro-birraio-birrificio-26-nero-fabio-massellucci.jpg 328w, https:\/\/www.ghidimetalli.it\/ghidimetalli\/wp-content\/uploads\/2017\/02\/mastro-birraio-birrificio-26-nero-fabio-massellucci-210x300.jpg 210w\" sizes=\"(max-width: 328px) 100vw, 328px\" \/>Si la fermentation a lieu \u00e0 une temp\u00e9rature NON CONTR\u00d4L\u00c9E, que se passe-t-il ?<\/strong><br \/>\n\u00ab La levure va se d\u00e9cha\u00eener et le brasseur ne pourra donc pas obtenir le m\u00eame produit que celui que le client a l&rsquo;habitude de boire, car en fonction de la temp\u00e9rature de fermentation, la levure produira des ar\u00f4mes, des saveurs, des d\u00e9chets, etc. diff\u00e9rents \u00bb.<\/p>\n<p><strong>De 1 \u00e0 10, quelle est l&rsquo;importance d&rsquo;avoir des cuves \u00e0 temp\u00e9rature contr\u00f4l\u00e9e<\/strong><br \/>\n\u00ab\u00a0Certainement 10. Parce que la fermentation est le processus fondamental dans la cr\u00e9ation de la bi\u00e8re, et ce qu&rsquo;un bon brasseur doit savoir faire, pour pouvoir vendre, c&rsquo;est la reproduction de la bi\u00e8re en termes de go\u00fbt, d&rsquo;ar\u00f4me, de couleur, etc.<\/p>\n<p><strong>Avez-vous toujours eu des cuves \u00e0 temp\u00e9rature contr\u00f4l\u00e9e ?<\/strong><br \/>\n\u00ab\u00a0Non. Avant d&rsquo;ouvrir, j&rsquo;avais un syst\u00e8me de 100 litres et des cuves sans contr\u00f4le de temp\u00e9rature, la pi\u00e8ce o\u00f9 se trouvaient les cuves \u00e9tait \u00e9quip\u00e9e d&rsquo;un climatiseur, mais je ne pouvais toujours pas contr\u00f4ler la temp\u00e9rature \u00e0 l&rsquo;int\u00e9rieur des fermenteurs et donc, en plus de ne pas toujours obtenir le r\u00e9sultat habituel en termes de go\u00fbt, d&rsquo;ar\u00f4me, etc.<\/p>\n<p><strong>Les cuves \u00e0 fond plat ou \u00e0 fond conique sont-elles pr\u00e9f\u00e9rables ?<\/strong><br \/>\n&lsquo;Certainement \u00e0 fond conique.
