{"id":27399228,"date":"2017-07-25T15:49:25","date_gmt":"2017-07-25T13:49:25","guid":{"rendered":"https:\/\/www.ghidimetalli.it\/ghidimetalli\/scientific-results-2016-on-onda-the-winemaker-that-enables-the-production-of-wines-with-low-or-no-added-sulfites\/"},"modified":"2017-07-25T15:49:25","modified_gmt":"2017-07-25T13:49:25","slug":"scientific-results-2016-on-onda-the-winemaker-that-enables-the-production-of-wines-with-low-or-no-added-sulfites","status":"publish","type":"post","link":"https:\/\/www.ghidimetalli.it\/en\/scientific-results-2016-on-onda-the-winemaker-that-enables-the-production-of-wines-with-low-or-no-added-sulfites\/","title":{"rendered":"Scientific results (2016) on Onda\u00ae, the winemaker that enables the production of wines with low or no added sulfites"},"content":{"rendered":"<p><strong>Experimentation conducted by DIPARTIMENTO PER LA INNOVAZIONE NEI IN SISTEMI BIOLOGICI AGROALIMENTARI E FORESTALI &#8211; DIBAF &#8211; <\/strong><strong>University of Tuscia.<\/strong><\/p>\n<p>The &#8216;objective was to evaluate the technical suitability and practicality of operation of an innovative, multifunctional tank, <sup>Onda\u00ae<\/sup>, with a <strong>high degree of automation and low incidence of labor.<\/strong> The present research was conducted by vinifying Sangiovese grapes in red; to validate the objective, the same grapes were also processed in conventional winemaker, following the same winemaking protocol. <\/p>\n<p>The experimentation was carried out at the Baldetti Winery (Cortona, AR) where the <sup>Onda\u00ae<\/sup> tank, manufactured and marketed by the Ghidi Metalli company (Pistoia), was installed.<br \/>\nThe control panel of the <sup>Onda\u00ae<\/sup> winemaker was programmed to manage the entire production process, greatly reducing manpower compared to the conventional tank.<br \/>\nThe course of fermentation was smooth, and no criticality arose. The chemical and physical parameters of <sup>Onda\u00ae<\/sup> wine were similar to those of Witness. <\/p>\n<p><strong>In the <sup>Onda\u00ae<\/sup> winemaker, the pump-less pumping over system and the technical gas injection system made it possible to have a controlled atmosphere inside the winemaker at all times and a good extractive capacity towards chromatic and structural components.<\/strong><\/p>\n<p>Although weak differences in the level of total and monomeric anthocyanins emerged, the differences between the two theses in % red, yellow and blue did not appear particularly appreciable.
