They manage to <strong>preserve the original qualities of the food<\/strong> by safeguarding it from the spread of potentially harmful bacteria. <\/p>\n<p><strong>Sulfites in wine<\/strong> are not only added artificially but are produced naturally by yeast during alcoholic fermentation.<\/p>\n<p>Often, however, the amount produced naturally is not sufficient. In fact, sulfites are generally added as early as the grapes arrive at the winery: this is to allow a selection of the microbial agents that will go into alcoholic fermentation. <\/p>\n<p><img decoding=\"async\" class=\"alignnone wp-image-12641 size-full\" src=\"https:\/\/www.ghidimetalli.it\/ghidimetalli\/wp-content\/uploads\/2016\/09\/vino-senza-solfiti-entrata-cantina-uva.jpg\" alt=\"Sulfite-free wine. Entry of grapes into the winery\" width=\"700\" height=\"467\" srcset=\"https:\/\/www.ghidimetalli.it\/ghidimetalli\/wp-content\/uploads\/2016\/09\/vino-senza-solfiti-entrata-cantina-uva.jpg 700w, https:\/\/www.ghidimetalli.it\/ghidimetalli\/wp-content\/uploads\/2016\/09\/vino-senza-solfiti-entrata-cantina-uva-480x320.jpg 480w\" sizes=\"(min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) 700px, 100vw\" \/><\/p>\n<h3><strong>Conventional wine and sulfites<\/strong><\/h3>\n<p>The use of sulfites may involve various stages of processing: from delivery to the winery to bottling.<br \/>\nEuropean legislation (EC Reg. No 606\/2009) has set the maximum limit to sulfites in a wine at <strong>150 mg\/l for reds<\/strong> and <strong>200 mg\/l for whites<\/strong>, rising to <strong>200 and 250 mg\/l for sweet wines<\/strong>, respectively, with specific exceptions for certain types of wine and needs determined by vintage trends in specific production areas.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Sulfites in organic wine<\/strong><\/h3>\n<p>In the new EC Regulation 203\/2012, the maximum amounts of sulfites in organic wine are <strong>100 mg\/l for reds<\/strong> and <strong>150 mg\/l for whites and ros\u00e9s<\/strong>, with the possibility of increasing by 30 mg\/l if the wine has more than 2 grams of residual sugar.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Can sulfites be added to organic wine?<\/strong><\/h3>\n<p>The answer is yes, even in organic winemaking the addition of <strong>sulfites<\/strong> is allowed, although in slightly smaller amounts than in conventional wine.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Sulfites in natural wine<\/strong><\/h3>\n<p>The<strong> sulfite<\/strong> limit<strong> in natural wine<\/strong> is <strong>30 mg\/liter for reds<\/strong> and <strong>40 mg\/liter for whites<\/strong>, which is the <strong>maximum amount of sulfites<\/strong> naturally produced during alcoholic fermentation.<\/p>\n<p><em>Natural wine production is based on the idea of integrating new technologies with a philosophy of living that respects the environment and nature, trying to use as few additives and as little manipulation as possible.  <\/em><\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Wine without added sulfites<\/strong><\/h3>\n<p>The label statement \u201cContains sulfites\u201d is mandatory when the concentration of sulfites in wine is greater than 10mg\/liter, without distinguishing between sulfites produced naturally by fermentation or added and without the constraint of stating the precise amount.<\/p>\n<blockquote cite=\"mid:D3E0E793.82C6B%25info@lindafrosini.com\"><p>In cases where the amount of sulfites in the wine is less than 10mg\/liter, it is referred to as \u201c<strong>wines without added sulfites<\/strong>,\u201d and it is therefore possible to omit the label claim.<\/p>\n<p>Generally, these are wines produced using selected yeasts and controlled fermentation.<\/p>\n<p>Today there is a lot of attention to health, and therefore the most widespread trend, supported by the<strong>evolution of winery technologies<\/strong>, is toward a <strong>more targeted use of sulfur dioxide<\/strong>, which, in predisposed individuals, can induce headaches or allergic reactions.<\/p><\/blockquote>\n<blockquote cite=\"mid:D3E0E793.82C6B%25info@lindafrosini.com\">\n<p> <div id=\"attachment_8023\" style=\"width: 260px\" class=\"wp-caption alignright\"><a href=\"http:\/\/www.ghidimetalli.it\/it\/vini-naturali-con-vinificatore-onda-anche-vini-senza-solfiti\/\"><img decoding=\"async\" aria-describedby=\"caption-attachment-8023\" class=\"wp-image-8023\" title=\"Onda\u00ae Winemaker\" sulfites<\/strong>, we need grapes that are as healthy as possible and a high level of hygiene in the winery, preventing the proliferation of undesirable bacteria at all stages of processing; <strong>thanks to the <sup>Onda\u00ae winemaker<\/sup> and its pump-less pumping over system and technical gas injection system, it is possible to carry out these processing steps in a controlled and protected environment.<\/strong><\/p><\/blockquote>\n<p><em><br \/>\nThe <a href=\"http:\/\/www.ghidimetalli.it\/it\/vini-naturali-con-vinificatore-onda-anche-vini-senza-solfiti\/\"><sup>Onda\u00ae<\/sup><\/a> winemaker&#8217;s ability to vinify without the addition of
