Einer der beiden in Frage kommenden Vinifikatoren war der <strong>Vinificatore <sup>Onda\u00ae<\/sup><\/strong>. <\/h4>\n<p>Studie \u00fcber Sangiovese: eine der am weitesten verbreiteten schwarzen Rebsorten, die heute in Italien angebaut wird und die Grundlage f\u00fcr gesch\u00e4tzte italienische Rotweine wie Brunello di Montalcino, Chianti und Nobile di Montepulciano bildet; aus diesem Grund gilt sie als Rebsorte von gro\u00dfem wirtschaftlichem Wert. Eines der Merkmale, die diese Rebsorte und ihre Weine auszeichnen, ist das m\u00e4\u00dfige polyphenolische Potenzial, insbesondere das Anthocyan-Potenzial, das sich durch eine begrenzte Anzahl stabiler Molek\u00fcle auszeichnet, die die Farberhaltung im Laufe der Zeit manchmal problematisch machen. <\/p>\n<p>Die Sangiovese-Trauben wurden bei Azienda Agricola Baldetti (Cortona, AR) geerntet und vinifiziert. Zwei homogene Traubenmassen wurden gequetscht und abgebeert und in zwei Tanks mit einem Fassungsverm\u00f6gen von 50 hl getrennt: einer in einem <strong>multifunktionalen<\/strong> und innovativen <strong><sup>Onda\u00ae-Tank<\/sup><\/strong> und einer in einem herk\u00f6mmlichen Tank (Testimone). <span class=\"Apple-converted-space\"> <\/span><\/p>\n<p style=\"text-align:
