A<\/b><\/span>-<\/b><\/span>Automatisches Einspritzsystem <\/b><\/span>von technischen Gasen <\/b><\/span> <\/h1>\n

Das automatisierte Gasinjektionssystem<\/b><\/span> (Stickstoff, Argon,CO2<\/sub>, Druckluft oder Mischungen) arbeitet in drei spezifischen Zonen des Tanks: von unten, in der mittleren Zone und von oben. Alle Gase werden aus lebensmittelechten Flaschen geliefert, die direkt an das Steuerpult des Tanks angeschlossen sind. So kann das gew\u00fcnschte technische Gas ausgew\u00e4hlt, seine Menge \u00fcber spezielle Durchflussmesser eingestellt und die Blaszyklen \u00fcber 24 Stunden programmiert werden. <\/span><\/p>\n

Die Insufflation von Gas von unten<\/strong> erfolgt dank einer Reihe von mikroperforierten Injektoren, die in der N\u00e4he des Bodens angebracht sind. <\/span><\/p>\n

Durch die Wahl der Inertgaszufuhr ist es zum Beispiel m\u00f6glich, den Most w\u00e4hrend der G\u00e4rung oder Mazeration sanft umzur\u00fchren, um den Austausch zwischen der fl\u00fcssigen und der festen Phase des Mostes\/Weines zu erleichtern, oder den Feintrub w\u00e4hrend der Reifung in Schwebe zu bringen, oder sogar den Tank schnell mit Inertgas zu s\u00e4ttigen, um ihn in einer gesch\u00fctzten Atmosph\u00e4re abzuf\u00fcllen.<\/span><\/p>\n

Durch das Einblasen von Druckluft ist es m\u00f6glich, den Most oder den Wein (in allen Phasen der Weinbereitung: vor der G\u00e4rung, w\u00e4hrend der G\u00e4rung und nach der G\u00e4rung) makro-oxygenieren zu lassen.<\/span><\/p>\n

B-Automatisiertes System zur Handhabung <\/b><\/span>und Umpumpen von Most<\/b><\/span><\/h1>\n

Das automatisierte System zum F\u00f6rdern und Umpumpen des Mostes besteht aus einem pneumatischen Kolben, der ein geschlitztes Rohr, an dem eine Scheibe und ein R\u00fcckschlagventil befestigt sind, anhebt und absenkt. Das System wirkt sowohl von oben als auch von unten auf den Tresterhut ein: Bei jedem Druck des Kolbens steigt die Fl\u00fcssigkeit entlang des Rohrs nach oben und tritt durch den oberen Schlitz aus, wodurch ein leichter und konstanter Regen entsteht, der den Tresterhut von oben benetzt; gleichzeitig erzeugt die Scheibe, die in den fl\u00fcssigen Teil des Mosts eingetaucht ist, eine Welle, die unten auf den Tresterhut trifft. Onda\u00ae sieht zwar aus wie eine normale Abf\u00fcllmaschine, funktioniert aber v\u00f6llig anders, denn dadurch, dass keine direkte mechanische Einwirkung auf den Tresterhut ausge\u00fcbt wird, werden die Belastung des Mostes und die Bildung von Trub reduziert. <\/span><\/p>\n

Ich habe mich f\u00fcr den Ghidi-G\u00e4rtank mit dem Wave-System entschieden, weil ich die M\u00f6glichkeit mag, weniger Chemie in den von mir produzierten Weinen zu verwenden. Bei der ersten G\u00e4rung im Jahr 2017 habe ich sofort bemerkt, dass der Wein, der aus dem Tank kommt, eine sch\u00f6ne Weichheit und tolle Aromen hat, die eine normale G\u00e4rung nicht hat.<\/p>\n

Ich nenne ihn einen vollst\u00e4ndigeren Wein, bei dem Sie alles sp\u00fcren k\u00f6nnen, was hervorragende Trauben ausdr\u00fccken.<\/strong><\/em><\/p>\n

W\u00e4hrend der Reifung im Holz, die nun zu Ende geht, reagierte er besser auf das Holz, behielt alle seine urspr\u00fcnglichen Eigenschaften bei und entwickelte sich sogar noch weiter.<\/p>\n

Die Aromen und die Eleganz sind anders als bei den anderen Weinen im Keller.<\/strong><\/em><\/p>\n

Ich bin froh, diesen Weg eingeschlagen zu haben und werde in den kommenden Jahren weitere Tanks in das Wellensystem integrieren.<\/p>\n
