1. VERSATILITY
With just one tank it’s possible to carry out the maceration pre/post fermentative, alcoholic fermentation, aging (also on fine lees), maturation of white and red wines.
2.MODULARITY
Onda® can be supplied with the required specifications and accessories which are normally available for a tank: the final user can customize it, according to his needs, choosing within a wide range of bottom doors, covers, valves, refrigerating band, total insulation etc...
3. DECREASING LABOUR COSTS
Thanks to Onda® any operation which concerns must processing by means of pumps and any mechanical or manual wine-pressing becomes unnecessary.
The tank is totally automated: the control board regulates the rate and intensity of the oscillations produced by the ram (which moisten the cap and create the wave) and the delivery of inert gases or compressed air (to mix or oxygenate the must/wine).
A single operator, in a few minutes, can plan and manage the whole winemaking process, maturing or ageing, even for several tanks at the same time.
4. DECREASING THE USE OF SO2
Onda® is a “closed system” the vinification processes take place inside. A safety valve creates a slightly pressurized environment (about 0,2 bar) which prevents unwanted microorganisms to get inside and increase the antibacterial power of CO2 which is produced during fermentation.
Onda® minimizes the possibility of any contaminations coming from the cellar because the use of pipes, pumps and external tanks during the winemaking, becomes superfluous: this allows, on equal terms, a reduced use of SO2 compared to normal tanks.
5. REDUCED STRESS FOR THE MUST
Thanks to the ram with the submerged disc and to the must processing and replacement system the cap is not subjected to a mechanical stress (as it happens for example in punching-down and processing and replacement by means of pumps etc): in such a way there is a diminished production of lees.
6. GREATER EXTRACTING POTENTIAL
WithOnda® the cap is always delicately moistened and the processing and replacement of the liquid of the must makes homogeneous the liquid part located under the cap, which is over saturated with extracted substances, with the one which is closer to the bottom of the tank where this component is smaller. Onda® allows to maximise the extraction process.
7. DECREASING DRAWING-OFF TIME
During fermentation the cap is not mechanically stressed though being constantly moistened, this makes the skins to be well separated resulting with a decreasing drawing-off time.
8.POSSIBILITY TO CARRY OUT LONG TERM MATURATION (ALSO ON FINE LEES)
This operation can be performed with a planned set rate and without any worker being involved: the insufflations of an inert gas from the bottom (argon or nitrogen) allows to bring in suspension the fine lees deposited on the bottom, besides, in case of sulphuric bad smell, appropriate mixtures with variable oxygen concentrations can be used.
9. EASY CLEANING
Onda® is free from hollow spaces inside and the whole of its components are equipped with a rapid dismantling system: this makes the cleaning of the tank easy and rapidly performed.
10. REDUCED MAINTENANCE
TheOnda® system is very simple: it reduces maintenance expenses and the probability of malfunctioning. Even the check valve placed on the pipe is not subjected to blockages because is equipped with a protection grate and self emptying device in case some skins or grape-seeds got inside.
